Stove top convection oven

I recently picked one up for a fiver in a charity shop and have used it a couple of times in the van for heating pies and pasties but I'm sure I can cook much more in it and so am looking for an instruction leaflet or recipe book for it. There is no manufacturer's mark on it anywhere and it is exactly the same as the one in the link except that it is all black.

I've googled and can't find anything useful.

So if anyone has one with the original instruction leaflet I'd be really grateful if you could somehow copy it for me - photocopy / photograph / scan docs etc.

Or can someone who uses one give me some info about it and cooking tips / recipes. From what I've gathered it cooks 25% faster but how does that work when cooking on a gas cartridge camping stove - I've had a food thermometer inside it and it doesn't seem to get above 200C (which is probably enough for most things) but as the gas canister empties and loses it's "oompf" the temperature tends to sit around 150C.

Also I found that the food cooked (and burned!) on the bottom very quickly so it was a case of having to turn stuff over regularly (and therefore losing all the heat out of it). Or should I use tin foil under the food on top of the wire rack or should I line the bottom of the pan with tin foil (I tried this and as the bottom of the pan gets very hot, the tin foil burned).

So do you cook your food upside down?
Or do you use tin foil or a small metal plate / oven dish for the food?
Should the vent in the lid be open / closed / halfway and why?

Any other experiences / info appreciated.

Lol, funny how things work out, I'm going there this weekend, a tenner for 2 nights camping on hard standing at the Rugby Club, free music and lots of beers. Proper loos!! I was intending posting about it here in another thread but might as well kill 2 birds with one stone, even unintentionally!

Best to ring and book campervan spot today as they are allocating the space today. There'll probably be some last minute availability but might not be on hardstanding.

I bought a very similar item from Portugal in 1990,it is an old design and has been in use there for ages. Henry Myhill wrote about them in his guide to motorcaravanning book over 30 years ago.

I think that the usual camping gas burner may have too small a diameter and the heat is directed onto the inserted plate rather than being spread across the whole of the bottom pan as would happen on an electric plate or a larger diameter ring.

I have been trying to find a picture of the one I mentioned as I sold it years ago. One thing it did have was a copper funnel type device that the cooker,which has a hole in the middle.sat on this directed heat through to the top of the oven from the burner.

I think you are right there. Any solutions? A heat dispersing mat or some kind of support to lift the oven higher off the flames?

I had one of those as well and have done complete roast dinners and cakes in it.we always called it a dutch oven but can't remember what they're called in Portuguese. cheap too !
 
having looked at these type of stoves it appears that they rely on air movement in through the large central hole of the bottom dish and then through the holes in the edge of the plate and I would have thought that with the gas burner directly below the large amount of flue gas that this produces is stopping any convection currents from forming throughout the oven.
As you had burning from the bottom this could be radiated heat from an over hot bottom plate and a lower flame setting may help air movement and keep the bottom plate cooler but then you may not get the oven hot enough.
It would also appear that many people who brought a similar oven on amazon also brought a gas ring diffuser plate.
Have you tried it on an electric hot plate?

Camping spot has been confirmed at Kirkby lonsdale beer & music festival I shall pack an infra-red thermometer and stuff to make a trial diffuser

Fantastic! I must check out the Carnforth charity shops! I'll be at Kirkby Lonsdale this weekend, I'm in a white LWB Hi Roof Transit with a roof rack and the letters WVW (in pink) will be on my dashboard. And just in case of any doubt, there's a sign on the front passenger window warning folk to beware of the cat! I'd forgotten all about the Yankee screwdriver, many thanks.
