Lots of good ideas there, but we don't actually know yet what OP is trying to achieve, so it's hard to suggest solutions. My van was too small to sleep in so we carried a tent. The kitchen area was set up for meals on the road & to provide some shelter when cooking as the tent was a small ridge. No end canopies in those days, so you could not cook in the tent.
So, will you need to have a unit that can be reached & used from inide the van on wet days & from outside on nice days? Or do you want a removable "clip-on" unit to convert a work van into a weekend camper, or is tre some other problem you are trying to solve. Also what van? Does it have rear doors? Does it have a rear engine? All these questions will affect what will work & what will just be a pain in the bum.
