Have just bought a small pressure cooker (2.7 ltr ) and need a book with basic simple easy meals in it.Have trawled the net but all seem to be complicated books.Any ideas?

Grate cheese into beens and add some instant potato powder ,then a egg and some bacon in a small pan,the only thing missing will be irish potato or soda bread but you cant win em all.

Generally for vegetables we give them 7 Mins when up to pressure (cut your potatoes up) for meat anything from 30 mins to an hour makes cheap joints moist and tender. just chuck some stuff in and give it a try if its not quite done bring it up to pressure again.

Chicken Hot Pot

Put Chicken Pieces in pressure cooker [cuts to your taste] fry these in a little oil in the PC, add chopped onions and garlic to taste, fry all this together till browned, put in some Potatoes cut smallish and some carrots sliced , pour in a tin of chopped tomatoes refill the tomato tin with water and tip this in, add salt and pepper and a teaspoon of sugar, you can add any other veg to choice ie swede , parsnips sweet corn etc, put the lid on pressure cooker and when it starts to hiss ,cook for 15 -- 20 mins, meanwhile get some boil in the bag rice cooking , also in a jug mix some gravy powder [Chicken] an oxo cube [Chicken]and some water to make a gravy. when time is up for pressure cooker remove it from the heat and remove the lid when the pressure has dropped and it is safe to remove.mix the gravy mixture into the Hot Pot and return to the heat and simmer till hot enough ,taste the Hot Pot and add any more seasoning as desired, a dash of chilli is good if you like that, drain the Rice and then serve it on a warmed plate / bowl add some hot pot and enjoy, if there is any left the next day, fry some onions and mushrooms with some curry paste and powder in a frying pan with a little water and add this all to the left over hot pot and bring it all to the boil, Wallah quick Curry and rice, the hot pot can be made with Pork Chicken Lamb or Beef or a mixture of all , your choice, great winter warming food, enjoy, a meal in about 30 minutes.

Cabbage Stew [ Cabbage Brod],

Sounds awful but delicious, A south african dish, in the Pressure Cooker fry some Lamb , cheaper cuts are best ie, neck, belly, fatty chops etc, fry away till it slightly burns, drain off the residual fat, add onions and garlic to the PC and fry, Add a layer of chopped cabbage and a layer of sliced Potato, about half inch thick, sprinkle some nutmeg powder or grind a nutmeg over this, add a few dried chillies, salt and pepper, add some water about a cup full, repeat the layering and seasoning till P C is full, add a little more water , close the PC and cook for 15 --20 minutes with the pressure weigh turning slowly.Meanwhile slurp a glass of wine and cook some Rice, boil in the bag is easiest , especially as you have probably had another glass of wine, also mix a gravy mix in a jug of hot water, oxo cube and gravy powder, when time is up for P C , open it when safe ,add the gravy mix and heat till hot enough, serve in a warmed bowl over some rice, it will look rather nasty but it is so delicious , enjoy. This dish improves with age so next day it will taste even better, we rarely have any left for next day as we tend to eat it straight away, bet you do too.

Lamb , cheaper cuts are best ie, neck, belly, fatty chops etc,

Good point . Basic rule , for me , when cooking meat in pressure cookers only use meats and cuts which require slow cooking . Personally would not cook chicken , fish etc . Scrag end of everything else

Cheap cuts of Lamb are best for the Cabbage Stew but cooking good Chicken beef or Lamb in a pressure cooker is fine also.
