As it seems that many folks have an air fryer these days I thought it might be an idea to see if we can post up some simple recipes.
We eat a lot of chicken as we are on a low carb diet. One simple dish that I make is this one...
Air fried Keto chicken
Diced chicken - 2 breasts diced up works well enough for us
80gms ground almonds
1/2 tsp flaked sea salt...any salt would do or none if you are low sodium
1/2 tsp cayenne pepper...or more if you like it hot
1 egg
- Dice up the chicken
- Beat up the egg
- Mix the other ingredients together
- Dip the chicken bits in the egg and then in the dry mix
- Wang it all in the air fryer and use the 1 cal spray oil on top just to help it crisp
- Stick it on for as long as you think in the air fryer. I do 15mins at 200 degrees in our Ninja. Make sure to give it a shake half way through.
Your own chicken nuggets which do not taste of almonds. I serve this on top of a mixed salad but anything you like would do.
