Anyone like to share campervan friendly recipes?

One of our favourites is a Spanish Omelette. This is great for when you've taken off on a whim, having raided the home fridge before departure, or on the last night of a trip because you can use up all kinds of odds and ends that wouldn't make a meal on their own.

Start off by mixing up eggs, a splas of milk and seasoning in a jug/bowl/large mug. Then chop everything else into small pieces.

Fry anything raw, but that needs cooking first, in just a tiny drop of olive oil (or butter/lard/vegetable oil/etc) This might include bacon, sausage, chicken, potatoes. Then add food that needs less cooking, tomatoes, pepper, courgette, mushrooms etc, then toss in any herbs, olives, grated or cubed cheese, left over cooked veg or meat etc. Pour over the egg mixture, turn down the heat and stir gently until it starts the thicken. Then leave cooking (with pan lid on if you have one) until omelette is set.

If you have a grill you can sprinkle on grated chees and grill until it bubbles, but that's not vital.

Eat immediately. Can be served with salad/crusty bread if you like (and have it with you)
 
Sounds like my jollop to me it all goes in to a pot and add a tin of chopped tomatoes and a bit of flavouring like stock cubes . Job done ! A one pan meal

quick tip to thicken slightly use stuffing mix different flavours add a little bit of taste to it as well as thickens works well with cheap soups {not a whole packet but just teaspoon or two or you end up having to slice the soup }
 
I only have two gas hobs in my Hymer Swing but I still manage to do:

Spag Boll
Chicken Fried Rice
Sausage, Mash, Peas & Gravy
Chicken Legs fried in Bacon & onions, with boiled rice & veg
Chilli Con Carne

I tend to cook rice and not spuds as I can throw the veg into the same pan

I use a large frying pan with Lid & a 3 tier steamer

Oh and I am cooking for four

My favourite using a single ring camping stove is Liver, bacon and onions with swede, carrot, parsnips and boiled rice Can't fit anything else on the plate approx 20 mins
 
Cook bacon pieces (lardons) mushrooms and onion in butter in a deep pot. Cook pasta and add to pot then double cream and plenty of black pepper, cook for a further minute then take off the heat. Add a raw egg (it will cook in the heat and give it a nice sheen)
Add grated cheese, cheddar or parmesan and it's all done.
 
Oldish Hippy, I sometimes use a can of soup as a sauce because we always carry an emergency soup supply.

Wolfie, I'm glad I only have to feed two. A steamer sounds a great idea, especially when cooking for four people.

Haaamster, that sounds tasty - I'm going to try it.
 
Mussels in wine, shallots,mixed herbs, garlic seasoning, dollop of cream and French stick.

One pan, one ring, ten mins to prep/cook and 5 mins to eat

PS If you are in Conwy, North Wales, look on the harbour for the Mussel cleaning station, Conwy mussels are harvested by hand and you get lovely BIG mussels full of flavour. Much better than the commercially grown European ones.
 
basmatti rice

An essential ingrediant as you can do a measure of rice, same measure of water, boil with lid on, give it a stir then take off heat and leave with lid on whilst doing something else on the stove, give it a stir after 5-10 mins and after a while you'll have nice fluffy rice and you shouldnt need extra gas whilst its cooking.
 
Had a nice yearling pheasant yesterday. My sump guard is just the right hoieght to snatch their heads and not damage the meat.;) Went down well with some barley and chopped herbs. I use barley sometimes instead of rice as just rice gets a bit boring. Also I dont want to get slanty eyes. Which reminds me saw some pheasants ggetting randy this week. the weather is warmer round here and in the forest so they are thinking it is nuptials time again. I just hope they start laying. then it is free eggs for 3 or even 4 months. Luvly jubly, much better than chicken eggs.
 
In Fortwilliam last year, got chatting to a few fisherman they gave us 4 mackerel, we were parked in the harbour, so rather than hogg all the mackerel, i made some pate, grilled the mackerel, mashed it up with mayo, garlic, herbs, toasted some thin bread and shared it with all the fishermen, they loved it and as some of them were locals, they told us some lovely places to wildcamp and where to go for water and empty loo :cheers:

Bloody L, I couldn't even do that in my kitchen at home, let alone in a MH. Respect :bow:
 
Quick pasta dish

Take a packet of a pasta in sauce, prepare as per instructions on the packet, whilst cooking add a cut up Mathesens smoked sausage, continue cooking till pasta is the right texture and the sausage is well heated. Cheap, fairly quick and quite appetising.

Forgot to mention it tastes so much better with fresh pasta rather than dried but it's so easy to make either way.

I use mulligatawney as to add spice to a caserole, works a treat.
 
A quick any easy leftover snack, make a tortilla sandwich with a tomato based sauce. Add cheese, tomato, onion etc,dry fry both sides of the tortilla in a large frying pan for a few minutes until the cheese has melted, eat.
You may prefer to pre fry the filling first so they soften.
