I've nearly finished a two week trip to Hong Kong, Vietnam and now I'm in Singapore. Passing thru this a market in Nah Trang, Vietnam, I was astounded by what some will eat.
Things that smelt like deep fried pleghm, and all other disgusting things
Dried fish, chicken feet, the only things they don't eat that had a face and legs are clocks and tables and chairs.

And the stink was something else.

Whatever the locals are eating, it's not doing them too much harm.
I bet you see more prams and pushchairs, than hearses ?

With mushy peas, gherkin and raspberry jam..... Nah, it'll be too messy to eat with your fingers.

We had a tapas of " Pig's lips", while in a Spanish village.
Imagine lightly cooked pork scratchings, dowsed in Tabasco.
Very chewy, loads of them.
We suspect the , " lips ", might have included the snout.
They improved... After the third bottle of Cruzcampo.
Tripe lovers might like, "Callos a la Madrileña "...

" Strips of beef, chorizo, in a paprika sauce ", they tell you... Very traditional winter dish, on the high plains,north of Madrid.
The beef is actually cows tripe. Again very chewy and needs at least half a bottle of Extremadura Red, to wash it down.

I'll try anything once, except incest, Prosecco, high heeled shoes or ITV2.

Had the snout once in La Guardia . Bit chewy , dog wasn't too keen either .
At home I always buy pigs ears for the dog . Can't seem to find them in Spain , well not in pet shops anyway

No wonder you can't find them in pet shops, they are considered a delicacy in Rural Iberia.
Try the butchers shop, but go early in the day. Those little , "Black Grannies ", snaffle them.
Same with sweetbreads.
Wasted on dogs, IMHO.
 
Percerbes ? Mr B.
Would love to try them, but they're so expensive, when on the menu, down here.

I'm frightened that Management might get a liking for them... And bankrupt us.
yep ,percebes, have a couple with your coffee at the fishmarket yum
