This recipe is really just a base for any other veggies or seafood that you want to throw in.
1 large onion
1 red pepper
Oil or butter
Can of creamed corn
Curry powder according to taste
Seafood marinara mix 500gms for two people. Any mix of fish would do - bite size chunks.
1 can of water
Chopped shallots
Sour cream
Basically you can double the ingredients for double the number of servings.
Brown the onions and pepper, add curry powder, add can of creamed corn, add seafood.
Add water - use the empty can.
Bring to the boil then simmering heat until the seafood is cooked, small pieces will not need to be simmered. Be careful not to overcook the seafood.
If you want other veggies they need to be cooked before adding to the soup. Any root veggie is good - spuds, carrots, etc.
Serve with a dollop of sour cream and a sprinkling of shallots.
