I looked at getting ours built, and it is a brave decision to let someone else do it, once started things crop up, specifications gets changed as the customer thinks of new ideas to incorporate, a van building company will not want to stop and have to change things, I had zero skills but managed to built a pretty decent van with all the essentials you would find in a newly manufactured van, the woodwork is the hardest part, but if you can cut a straight line it's manageable, there are loads of videos on YouTube to help and a few DIY build forums including the sister site to this one.
The woodwork is also the most expensive if you cannot do it yourself, the gas, plumbing and electrics can be farmed out as they are short term jobs.
