Cooking in the Van

I bought a book a couple of years ago and lost it! But it was written by someone sohwing how to cook freash when hill walking etc had some good things in it and was around A5 or pocket size Worth looking at and told you how to store it weights etc sorry cant remember the name but it had a reddish cover with a fella on the front picture
 
How many gas rings do you have ? Three

Is there a freezer on your van ? Yes but only a small one as part of a fridge. Good for ice cubes and a couple of packets of stuff or small amount of fish/meat

Do you have access to electricity for blenders, food processors etc ? Yes I have a 1000W inverter so 240v at all times, but no space to store large food processors.

How much storage do you have for ingredients, pots, pans etc ? Ingredients; fridge and two locker cupboards. Grill pan, Kettle, frying pan, small pan, large pan with steamer. Most utensils.

Would you like to shop most days or do you prefer to stock up ? Shopping most days for fresh ingredients

How important is healthy fresh food ? Prefer things with fresh fruit and veg, spices, herbs, cheese, fish etc

Are your tastes traditional or are you open to new ideas ? I don't really like traditional foods. Prefer eastern type with herbs and spices eg Thai, Indian, Chinese, Fusion cooking.

Things I never eat (most people will throw up their arms in horror): Baked beans, macaroni cheese (etc), spotted dick type stodgy puddings, custard, tomato ketchup, brown sauce, salad cream.

Good luck with your book. The camper van cookbook by Martin Dorey was not a bad effort but did lose it's way somewhat with a lot of waffle in it!
 
Knives

I have a strong magnetic knife rack on the wall above the cooker - keeps the knives handy and sharp. Also got a lidded deep skillet from Lidl and cook nearly evrything in it. always take basic tins - fish, meat. some stock cubes, rice etc. I have an old plastic dry milk container in which I have two half pound bags of self raising flour, a little bag of suet, and some dry yeast. all nice and snug. I can then make scones, dumplings, and even some bread if we run out. put some of the old fashioned measuring hints in the book - ie heaped tablespoon flour = 1 ounce, flat tablespoon sugar - one ounce. We dont always have scales to hand.
 
Yes scales are a bit of a pain so Im not using them in the recipes. Most ingredients will be measured with things easily to hand if indeed they need to be measured. Spoonfull, cup full, handfull, dollop, pinch, splurge, drop are the order of the day.
I found a large crop of Jews Mallow yesterday and made Molokhiya. A very risky dish to serve to guests as people either love it or hate it. It has the look and consistency of green pond slime. Its made by chopping the leaves of the mallow and adding them to a strong chicken stock, then adding chopped garlic and corriander fried in butter. it is usually served with Shureya Rice which is made with vermicelli pasta.
What I find most interesting about it is that kids love it. My friends who have two boys of 7 and 8 that never touch vegetables if they can help it were devouring it and asking for more, much to the parents' amazement.
This and other wierd and wonderful recipes will be in the book which I am now busy putting together. Happy camping, Skratt

Cooking in the van

Hi everyone,
Does anyone know how the book is progressing?
 
I started my camping life off with just a trangia, so only one ring. You will be suprised at what you can cook with one ring, you just need to be a bit inventive with your pans. Have cooked most things even fish and chips on my trangia. Now I have a two ring hob and a cobb bbq as well as the trangia, so I can be a bit more inventive with the meals I make.
