Start off a large pan add butter and a little oil let it melt add onions and pepper give 20 mins so the onions cooked without burning
Add a mix of crushed garlic / ginger mix it in give it time to infuse
Add chicken leg off the bone or breast cook it until the meat is sealed
add 1/2 dessertspoon of coriander powder and another 1/2 of cumin powder stir let cook through for a minute add I/2 tsp of chill powder or to taste
Add 1 dssert spoon of tandoori masala powder stir coat the mixture again give it a minute or two making sure it dosnt burn add a few green sultanas I like the sweetness
Add atablesppon of yoghurt and stir add the lid turn down let it simmer
add toms chopped fresh ones add as you go along to get texture I use three or four ,,,,add two with the yoghurt then the others 5 mins or so later
Finally a pinch of garam masala and a little fresh coriander to garnish serve with rice or Naans chappati
