Pauljenny on the Moules mariniere thread came up with a fantastic Mallorcan dish

Lightly toast a split Baggett, rub with a large peeled garlic clove...like sandpaper.
Drizzle with olive oil, top with a thin layer of fresh,ripe pureed plum tomatoes,blended with black pepper, sea salt and marjoram.return to grill. Warm gently.

Split baguettes make fantastic lunchtime pizzas too, Bit summery. a very light meal but hot day glass of white wine, real comfort food.

The technique slightly different split a baguette from the side and lightly toast.

in a saucepan melt a good knob of butter, add a couple of finely chopped garlic cloves and let it infuse.

Brush the par toasted baguettes with the garlic butter mix or if like me a garlic addict i spoon it on an let it soak.

dress the baguette the with your favourite meat . pepperoni , garlic sausage, Salami normal candidates .

Slice very finely buffalo mozzarella and drape over the meat. add cherry tomatoes and drizzle with balsamic vinegar.

Stick back under the grill for 5 mins until the cheese has melted and bubbling, the tomatoes often take a bit of colour too.....simply serve ...

A real tasty and quick meal..

These recipes should be good using ciabatta instead of baguette (I love ciabatta!).
