Quick Kedgeree - sort of
I love Kedgeree, which originates from the Raj, but I can't be bothered to put the time in to make it that Julie does.
So, I've just tried a quick basic version with Cous Cous instead of rice.
1 cup of Cous Cous (soak for 10 minutes in veg stock)
Diced Onion, diced Green Pepper, a few slithers of Chilli, 3 or 4 whole Cardamoms - fry all of this together for a few minutes in Sesame Oil.
Add a load of Curry powder and Cumin.
Chuck in the Cous Cous and stir it all together. Lob in a handful of Prawns and stir for a minute or so, quick dash of Soy Sauce Et voila!
Though I say it myself, this was quite delicious and I will be using this recipe a lot!
(Should really also have Boiled Eggs and Smoked Haddock in it to be Kedgeree, but as I say - quick version)
