As the question came on the European part I imagine this may also apply to EU. I am very intolerant of wheat and find it not too much of a problem. Bread is a potential problem but in UK most big supermarkets stock it. In France there is a good selection of all gluten free goods, however when I was last there I really needed to order the loaf of bread, some of it goes back to the sponge type of bread as it was years ago. Although I was last in France two years ago I hope that things are even better by now. The main clue is to read the ingredients as we have to here! One note is that the ancient wheat, spelt, is something which many with intolerances can eat, If you like French crepes you need to have the Galette which is the savoury version and the mix can be used for sweet crepes too. I have had a few strange looks but so far no problem. Good luck!
