We often do a variation of a Jamie recipe

I use thighs rather than legs, not so much garlic, and add green olives and peppers (yellow, usually, but it doesn't matter) and mixed herbs, and maybe a quality stock cube.
Tinned cherry tomatoes usually have better flavour than fresh so I add some of them as well.
Pasta goes well with it or crusty baguette type bread.
It's a fresher, lighter "stew" that works well in summer. Always goes down very well when I make it for guests.
