fry fish fillets with button mushrooms and sliced shallots or spring onions, when nearly cooked, pour over a can of coconut milk and add 2 heaped teaspoons of red Thai curry paste. cook another 10 mins or so till it reduces. i just had this with mash and garlic buttered spring greens
 
Change coconut milk with Ambrosia rice pudding, it worked for me in the curry. :lol-053:
 
Funnily enough I had pretty much the same thing on tue.

I'd barbecued some salmon on Monday, so chucked it in a Thai red curry on Tuesday with coconut milk and shed loads of ginger etc
