Well folks my tour of england is coming soon but i just wondered do you have any web sites or advice on food you can make in a motorhome. Im sure its been discussed but i usually go out do my wildlife photog come back shower tv vino and a tin of whatever. I feel its time to get a grip, do some decent food and spoil myself. Needs to be good stuff does'nt takes hrs tasty. Love the basics like a good fry up but also Italian foods and the like. So something i can knock up in 30 mins.
 
Getting to grips with cooking in a van, is probably one of the biggest pleasures of being away in a van. So, how about not getting back to van knackered and opening a tin, allow a bit of time. Golden rule, first glass of vino, goes in the pot, the rest of the bottle, or bottles is yours.
 
you can get red or green Thai curry paste in jars from any supermarket . fry up sliced chicken breast , thighs , diced pork, fish fillets ,whatever you have , with a bit of chopped onion and sliced mushroom , add coconut milk or yoghurt last thing , eat with rice or mash or pasta

Cooking outside the van is even better Mark.

We use a proper wok or a big paella type pan nearly all the time.
Thus almost 1 pot cooking.
(Not true as we use rice a lot which is boiled separately first)
Lots of things cooked together in the wok often starting with onions and minced pork/beef or chipolata sausages (cook quicker !) and then mushroom or whatever.
Oxo salt pepper etc.
For quick and easy
Baked beans + grated cheese
One of the foil packed potato products (long life-ish)
Nothing wrong with a tin of Beef-stew or whatever perhaps enhanced with herbs/spice/chilli
Mushy peas with added Lea & Perrins.
Pasta and a sauce is also quick and easy.
As written above a few minor enhancments can make all the difference
Eggs - I do what I call a Scramlette ( Half omlette half scrambled) Cheese Onion Tomato etc
 
Must have stuff we carry are:

Vermicelli - light and just 4 mins to cook.

Couscous - pour on boiling water and let it stand 5 minutes

Microwave rice - we don't have a microwave so heat in pan with 10ml of water. 2 minutes.

I mix my own spices for curries - very light.

Same with herbs.

Idaho instant mash - best there is, just add boiling water and stir. Comes in different flavours.

Knorr stock cubes.

Coconut milk block.

Stilton cheese and cream cheese is very versatile for flavouring.
 
Before you go out, put a lump of something meaty with onions and mushrooms, frozen veg and a teaspoon full of packet soup...
Oxtail for beef, for example into an oven proof casserole, or tinfoil wrap.
Wrap a jacket size potato in tinfoil too.
A whole banana, with a little dark chocolate posted into a slit in the peel.. tinfoil wrapped too.. with perhaps a jigger of rum.
Cook slow and low in the van oven.
You'll get back to a warm appetising van.

PS if the jacket is one of yours how does it fit in the oven ?
