Ok I have been quiet a few days, but not idle

Indian Hotchicken wing, and then a tagliatelle with chicken mushroom and bacon ...finished with cheese and basil

I have never tried it in the van, two problems, initial smoking the meat then a decent griddle to cook on. It would work on a cadac style BBQ best I would think.

RE the smoking part there are two ways to do it , This works particularly well if you don't (which most people don't) have a tandoor oven.

Save an old large saucepan line the bottom with silver foil, place your spices for jerk pimento Star anise and cloves place another foil over it and then lay the meat on top. Seal the pan with more foil and give it 10 -15 minutes to smoke.

This technique using a teabag cut open is a great way of tea smoked salmon , trout mackerel etc.

The second way and possibly better way is to do above, lay the foil on the base of the pan in the middle place a ramekin with the spices and drop in a couple of lumps of it charcoal off the bbq surround the ramekin with the meat seal the lid again so smoke cant escape give 10 -15 mins on a low heat ...

Charcoal gives off a lot of CO so better off outside with this technique. then finish the jerk on the BBQ
