No reason this cant be cooked in a motorhome , oven/ remoska couple of hobs and in business

Yesterday was a really strange day because it would have been my Mums birthday, I have worked in a few kitchens in my life with some talented people, Occasionally working high end of the market. The reality is though, this journey started at home, as eldest I would prepare and start meals my mum come in from work , take off her coat " where are we me duck?" and she would finish the meal. Consequently as a teenage boy I was taught the basics well, More than cooking my Mum taught me a life skill,
I cooked this last night I am sure she would have approved. Pork Chops with a wild mushroom, shallot , garlic and cream sauce. Potato dauphinoise and fresh garden peas. To remind me I am not invincible I for the first time in years cut myself chopping the shallots !!..

Interestingly a very cheap dish to prepare per portion,

I am not sure my Grandma would have been convinced why I had to go "French" but Mum would have liked it.

Looks delicious, do you do meals on wheels to Lymm by any chance? It is good to see that you still want to prepare a 'proper meal', when, I imagine it can be soooo tempting just to throw a pre-packaged ready meal in the microwave. I was guilty of that when Iz & Lou went off on a jolly and I was on my own for 6 weeks. And, I am the cook in the house!

I'm the same at the moment. With David on smoothies I'm eating all kinds of crap. It doesn't seem worth the washing up for one. Must take a leaf out of your book Andy.

Just been shopping and bought some belly pork, mushrooms and jersey royals.

I love belly pork Sue, always have, but preferred it when it was a cheap cut before the TV chef's discovered it!

Whenever I go away in the van by myself, I get Julie to cook up some belly pork slices 'til they're nice and crisp, dice them and stick in a bag for the fridge. This makes easy breakfasts for me, I just have to stick a pan of beans on, stir in the diced BP and let it warm through. A proper cowboy breakfast! :tongue:

Sometimes at home though, I will just have about 6 BP slices on a plate with a couple of Kilograms of cauliflower cheese.

Then I'll have me dinner. :D
 
sitting there with a plate of belly pork and mash with fat running down my chin - not a pretty sight , but a happy one !

Rob, this was cheap, three packs from Lidl with 30% off. I used to buy in bulk from our local farm shop, but cos I shop most days, i see bargains, so my freezer is always full.
 
if you have a rare breeds farm nearby, try some iron age pig belly , or tamworth, in fact any cut off any of them !

Lidl's belly pork is very good Sue.

We had some from M&S last night and I said to Julie it was good, but the Lidl one we had the other night was better.
 
Pan haggerty tonight.

Using half a pack of cooking bacon from morrisons, 1kg costs £1.34 so its very reasonable.

I don't know what it will taste like because this is the first time I have tried it.

Pan haggerty was very nice,

I cooked the bacon onions and garlic in a large frying pan.

Next layers of sliced potato, sliced carrots in an indian cooking pot.

Covered with the cooked bacon and onions on top.

Covered with more sliced potato, added stock.

Simmer for about 45 mins on the hob.

Turned out quite edible, the cost of the half kg of bacon 67 pence !

much as i don't like offal, liver bacon and onion cooked in thick gravy, poured onto a pile of chips and peas has to be one of the cheapest tastiest meals around, and i'm salivating at the thought and i've just now downed a roast chicken dinner !

Me too Jeanette., it's so easy to make. The time consuming bit is making a good onion gravy. If I'm in a hurry, i use a tin of french onion soup.
Baxters game soup has its uses as well :ninja:. tonights offering went a tad mad in asda Scampi calamari rings a salad cracked pepper and sea salt fries....and a herby dressing

PS I should be 18 stone and 6 ft 5 ,,,,5 .9 and 11 stone lol .
 
I can eat most things but have never managed calamari/ squid. Went to a friend's hen party at an Italian restaurant. I ordered mixed seafood in a sauce. When it arrived it was full of baby squid. We all ended up swapping and sharing.
