I have been asked to add a forum just dedicated to motorhome cooking and recipes. So now we have one!

I am in the process of building my own camper conversion and I am going to make sure I have a big fridge freezer (got my eye on a waeco cfx65). I tend to batch cook at home and will be taking ready made meals with me - curries, pasta, chilli (the usual )- don't fancy cooking in the van but reheating should create minimal smells and washing up! Of course that's if I have room after loading up with Booze!
 
Your wife is trying to get u to cook phil don't do it next it will be housework :D
 
fry a chopped onion and 2 cloves garlic
add 4 boned chicken thighs ,cut up a bit,3 tsp turmeric,1 tsp of chili and 1 tsp salt
fry for a bit
add tin of toms and simmer for half an hour
add 2 tbs of ghee,or butter,or oil plus 3tsp cumin,3 tsp coriander,2 tbs of fresh or powder ginger, and a small handful of chopped fresh coriander if you have it
simmer 5 minutes
if you find it a bit sharp, i like it with half a can of coconut milk in it

easy peasy,chicken jalfrezi !

I live in Bradford where fresh herbs, amazing vegetables and spices at good prices are readily available. If anyone needs anything just ask and I'll bring to a meet....
