I thought tape was a big NO for gas fittings because the thread should not form part of the seal and tape can obstruct the proper seating. Any gas experts out there?
I thought it was still a NO for compression fittings where the seal is made by an olive, gasket or washer because it impedes the proper tightening of the joint where the seal is made. The thread should not be part of the seal.

Compression fittings are ok on gas pipework as long as it's accessible. So you can't use compression on gas and then box it in. Kev's right about the PTFE, there's a special thicker type that comes on a yellow roll that's specifically used for gas and you don't use as many ' wraps' . There's loads of liquid thread seals for gas, so basically use either as long as you leave it accessible.
Also get a gas leak spray like this:- https://amzn.eu/d/8c99UyG I prefer these to the aerosol type, and make sure that there is a drop-out vent in the floor below ANY gas joint and they must be left uncovered of course.

That's correct.
On a compression fitting using an olive/ferrule then technically there's no need for anything but a smear of liquid gas joint compound on the olive seat definitely gives an extra level of insurance.
Use PTFE(g) on the yellow roll OR liquid gas joint compound on taper threaded screw joints.
Use nothing on the threads of a nut on a compression fitting.
Olives should be copper NOT brass.
