just eating one of these i made earlier,sorry if posted before
cut pre-rolled puff pastry into 4
on each put half a skinned salmon fillet
squirt of sweet chilli sauce
cover with dollop of ricotta, spinach and garlic mix
pull all the pastry corners together and squeeze shut
gas mark 6 till cooked
 
Sounds yummy :tongue: I often have salmon with sweet chilli sauce but never put it into pastry before... or tried it with ricotta. Might give that a go.
Oh and about how much ricottta is a Mr Brown dollop? :D

i had a new tub of ricotta , so all that got used, half a tub could have been spread out tho
i like garlic , so 3 fat cloves crushed ,less is probably better
i used 4 balls of frozen spinach , but one pack of fresh works too
tasty midday snack which makes the Greggs steak bake i had yesterday, look disgusting

Another idea with salmon is an old saucepan lined with foil

Split two tea bags , place fillet on a trivet or arrange so the salmon is not touching the foil , cover and cook 20 mins a beautiful tea smoked salmon serve with salad and perhaps crushed new potatoes with a knob of butter

A neighbour brought round a large trout a few weeks ago & I smoked it over teabags on the hob. Scrummy Tuck!

I think salmon & chilli sauce is a match made in heaven.
I fry the salmon fillet in olive oil skin side down until it's crispy, give it a squirt lemon juice, freshly ground pepper & sweet chilli sauce on top, then finish it under the grill. The sauce caramelises nicely. :tongue::tongue::tongue:
