I guess fitting no.3 I can just turn it off and leave in place until moving on.

If I fit no.4 I guess it is a continuous 'live feed' to the cooker?

Your link to no. 4 is messed up, this one is what I think it should have been 382432566174 | eBay based on the item number you quote.

I am not an expert, but I have used both types of connectors

If I had that dilemma, I would go with the proper Bullfinch male for the BBQ end. The other type might be difficult to get at the collar to release it once inserted.
The bullfinch also locks in via the bayonet fitting.

The existing bullfinch bulkhead fitting should have it's own tap to turn off the gas to the bulkhead fitting.
Both of these connectors are also self-sealing so it won't leak gas when you unplug the BBQ, but it's best to also close the supply at the tap when unused.
