Avocadoes are one of my favourite fruits, but they always seem to be hard or totally rotten inside, so I started cooking them.
What you need;
Avocadoes - firm or unripe.
Tofu - firm - cut into 1/4" cubes
Cooked peas
Coconut cream or coconut milk
Sweet chilli sauce
Salt and Pepper
Asofetida powder, not essential but nice
Ghee/olive oil/sesame oil
Method/
Halve the avos, remove stone and then scoop out the flesh leaving about 1/4" on the skin so that it holds its shape and put aside with the stones to stop the remaining flesh from browning.
Heat some ghee, add 1/2 tsp of the asofetida and foam, then add the tofu and brown
Add the avocado flesh and lightly fry, add salt and pepper.
When the flesh starts to feel soft add the coconut, add peas and cook for 5 minutes and reduce til thick and creamy.
Transfer the whole lot into the avocado skins
Drizzle with sesame oil and chilli sauce
Bake at about 180C for 15 minutes.
