1992 S700

On September 6th 2019, I changed the engine oil at, 143971 miles, today November 9th the mileage is 144566, so in just over 2 years it has done 595 miles, do I leave it another year or change I have never been in this situation before. I just do it every year.

For the price of a filter/oil....

Change it...

Even IF you've not done a lot of miles there will still be combustion deposits in the oil.

Yep change as acids water damage engines, oils are meant to be used and heated up well inside an engine, low shot cold runs damage engines big time, best to do a hard fast run every 3/4 weeks, don't let engines tick over or keep oil long term.

Most recommended 12000 miles or 12 months whichever comes first.
Irrespective of mileage I have oil changed at mot so garage stamps service book

It really depends on what oil you used...
A good quality oil like Castrol will have a website explaining everything...
My view is leave it there for 5 years if not in use....

I think you should change it. Perhaps wait until just before you start using it much, but definitely change it. Old oil can and should be recycled, though I'm not sure how easy that is to arrange.
An old Mercedes engine like that deserves a little pampering. A filter and a change of oil isn't a huge expense, but a replacement engine or even an engine overhaul most certainly is a huge expense.
