The green glow plug light on my trusty 2004 616 Sprinter has for some time taken 5-10 mins to go out after starting.

It's always started first time, even in winter. I'm tempted to continue to ignore it. Should I?

The sprinter will start just as well without the glow plugs working so I would be tempted to just leave it

Yeap , if it's working don't break it.
 
Just make sure the relay is not sticking as it will burn the plugs out, if it starts without them like my van then disconnect the relay feed wire or fuse.
