Hello there,

I'm in need of some inspiration - every year before we tramp off abroad for a few weeks I face the same dilemma .... what to take with us in the form of emergency dried/tinned rations for those occasions where you end up in the back of beyond for several days with nothing in the fridge except white wine !!!

Every year I rack my brains and every year without fail resort to baked beans and eggs ... but not this year I have decided :hammer:

I'm assuming that most, if not all of you, must have at least one tasty favourite ??

The only restrictions are that we just have a hob and Pot Noodle is not an option !!!

hi porridge oats . you can do porridge or mix with cornflakes . chopped nuts .mixed dried fruit to make a nicmeusli .
put some in stews to help thicken them up.make flapjacks . their use is endless .
cheap luncheon meat eat as is or slice and fry/grill. drop in veg pot pretend its proper meat.
these days a few packets of pasta and sauce dont go amiss.
 
Trolley dash round Lidl's. Jars of curry sauce and Lloyd Grossman (when on offer) can't go wrong to cook up with some nice chicken or mince.

Could go on but will stop there.
 
Our emergency cupboard includes:

1. tins of tuna, tins of sweetcorn and pasta (makes a very good meal, hot or cold and with parmesan cheese sprinkled on top)
2. tins of corned beef - goes well with boiled spuds and salad or as the base for a corned beef hash (if you really must you could use packet mash but we carry lots of spuds wherever we go)
3. cans of tomatoes (together with onions, garlic and oregano these make a great sauce to mix with pasta and whatever meat you can find (including canned if you must!)
4. tin of minced beef, tin of red kidney beans, tomato puree and chilli powder - instant chilli con carne

We try to be in a position where we can eat reasonably well for at least a week in an emergency (always make sure there is an emergency crate of vin rouge somewhere in the van!) but unless you are snowed in there is usually a fresh meat supply within easy reach. We also carry a carton of UHT milk in case we can't get fresh.

Alternatively, make sure you've got a mobile with you and send out for a pizza!

Sounds all right to me.....maybe a few crisps, peanuts, oatcakes & cheese??
 
Lidl and Aldi both do a packet mix - either rissoto ( with cheese and onion) or cuscous with similar addatives - cook in pan with lid ( frying pan with plate lid will do) add a tin of tuna or salmon , heat through and serve............ yummy- only takes a short time and not a lot of washing up ( when water is short!!)
Spam or bacon grill, coat with bar b q ( or brown) sauce and fry - goes sticky and makes a great hot sandwich.
I keep a container with flour - slef raising and plain- make a quick scone ( plain, cheese or fruit)in the frypan great when the bread si past its sell by date.
 
you never mentioned if you had an oven ? if so plenty of fray bentos pies, so many different ones now on the market and always on offer at most supermarkets (£1), tinned spuds, pomme (dried mash) tinned stewed steak and big soups also agree with the self made bread/scone in the frying pan, MMMmmm.
 
hi zip. i agree .but use a pressure cooker part cook spuds then slice and chip them .then fry in shallow pan fraybentos chips and mushy peas .
mind when we go away in winter we could possibly last 3 months just on the food we take from here . uk is possibly the cheapest place to buy food in europe at the moment.
i,m stocking up with all the goodies every week . my trailers like a shop. best is meatballs in asda 39p cant beat that in the eu. lovelly. cheers alan.

I have got some Spam .... but not sure if I can actually be brave enough do anything with it!!!

packet of boil in bag rice, cooked - add tin of corn with peppers and cube the spam!! mix heat and serve ( those who love butter can add ome to make it richer). If you have some onion ( ordinary or spring) chop fine and add......

put s/r flour in a bowl (cup full would do to get the idea) add fat - butter or marj even oil at a push- jut rub it together till it looks like bread crumbs- you will know if you have enought fat ( too little and the crumbs wont happen- too much and it will just be sticky) If you are making sweet ones mix in a bit of sugar - dont go mad - add liquid, either milk ( good if its a bit off) or left over yoghurt or at a push mix some powdered milk with water - the mix should hold together and be slightly sticky, not too dry. pat out till about 1/2 inch thick. cut into wedges . heat fry pan and greae lightly, place in pan and turn down the heat - dont want them too burnt!!! turn when the tops seem to be drying out. the instructions are purposely vague........... use what you have!! mix thru some cheese or dry herbs at the dry stage for savoury ones. use flavoured yoghurt and a bit of sugar for sweet ones. and yes serve with jam and cream - yum.

Another quick Idea is apple and cinamon toasties - just as it says 2 slices of buttered bread, some sliced apple(or banana) and cinamon and a bit of sugar...... fry them and get out the cream......:banana:
 
Thanks for that, will have to get flour loaded!! I vaguely remember my mother making frying pan pizza bases this way, - she used oil to mix. She fried them both sides, topped them with drained plum tomatoes, cheese, anchovies and olives, with a sprinkling of oregano, and popped the frying pan under the grill to finish it off. One of our favourite meals!! I'm feeling really hungry now!!

you can buy a set of three or more steamer pans, and cook a dinner for three on one hob. (when not in use pans sit inside each other)

firstly cut veg up small pieces and thin slices, and put in top tray, carrots, cabbage, brocolli etc, steam this, because it is cut up small and thin it wont take long to cook, doesn't need to be stewed:eek:, put top tray to one side when cooked, make gravy in bottom pan which originally had water to steam, when gravy made, drop in cooked thin sliced beef or whatever meat you like, then put veg pan back on top, quick blast of heat then to one side again, quickly put aunt bessie York puds on a fork and quickly heat up over the hob flame, 30 sec to one minute, then dish up, almost like a sunday dinner.:tongue:

it can be done we have, when we had a small folding camper.:fun:
